chocolate angel food cake


someone sent me this in an email once. nice change of pace from the usual vanilla angel food.

  1. Heat oven to 375 degrees
  2. Sift flour
  3. Cocoa and 3 / 4 cup granulated sugar together 3 times
  4. Set aside
  5. Beat egg whites at low speed in a large mixer bowl until foamy
  6. About 5 minutes
  7. Add vanilla
  8. Cream of tartar and salt
  9. Gradually increase speed to medium while beating in remaining 3 / 4 cup granulated sugar
  10. 1 tablespoon at a time
  11. 5 minutes
  12. When sugar is incorporated
  13. Continue beating to stiff peaks
  14. 2 minutes more
  15. Sift one third of dry ingredients over whites
  16. Gently fold in with rubber spatula
  17. Repeat process 2 more times
  18. Pour batter into ungreased 10-inch tube pan
  19. Cut through batter to remove air pockets
  20. Bake 40 to 45 minutes
  21. Until top springs back when gently pressed
  22. Invert and hang pan on neck of bottle to cool
  23. To unmold
  24. Run a thin knife around side of pan and tube
  25. Invert pan
  26. Turn cake upright onto serving plate
  27. "garnish with confectioners sugar
  28. If desired"
