chocolate and pear trifle


posted in response to a request in the british cooking forum. i can't wait to try this one out, it looks yummy! prep time includes up to 24 hours chilling time, although it can be as little as 4-6 hours, you decide.

  1. Cut the ready-made chocolate pound cake into 1-inch cubes
  2. You should have about 8 cups
  3. Set aside
  4. To prepare the custard: in a medium size heavy saucepan
  5. Stir the sugar
  6. Flour
  7. Ground nutmeg and salt
  8. Gradually stir in the milk
  9. Egg yolks and vanilla extract
  10. Cook over medium heat
  11. Stirring constantly until thickened and bubbly
  12. Cook and stir for 2 minutes more
  13. Remove from heat
  14. Pour into a bowl
  15. Cover surface with plastic wrap and refrigerate for 4-6 hours
  16. To prepare the pears: stir the wine
  17. 1 / 3 cup sugar
  18. Lemon peel
  19. Ground nutmeg
  20. And ground cinnamon in large skillet
  21. Cook over low heat
  22. Stirring constantly to dissolve the sugar
  23. Bring to a boil
  24. Reduce the heat to medium-low
  25. Simmer uncovered for 10 minutes or until reduced by half
  26. Add the sliced pear wedges to wine mixture
  27. Stir gently to coat
  28. Bring to a boil
  29. Reduce the heat to medium-low and cover
  30. Simmer for 3-5 minutes
  31. Stirring occasionally until the pears are tender
  32. Remove the pears from the skillet with slotted spoon and discard any cooking liguid
  33. Cover and refrigerate the pears for 4-24 hours
  34. Putting the trifle together: place half of the chocolate pound cake cubes in the bottom of glass trifle bowl
  35. Pour half of the cooled custard sauce over the cake and half of the spiced pears over the custard
  36. Repeat layering the trifle with remaining chocolate pound cake cubes
  37. Custard sauce and pears
  38. Cover and refrigerate for 4-6 hours
  39. Right before you are ready to serve the trifle
  40. Remove from refrigerator
  41. And garnish top of trifle with whipped cream
  42. Grated chocolate
  43. And maraschino or candied cherries
