chocolate and peanut butter fix brownies


this recipe was developed with my recipe#87925 if you are in need of a peanut butter and chocolate fix, this will cure it for sure! prep time does not include make the brownies. the chocolate topping can be doubled if desired for a thicker layer.

  1. For the brownies
  2. Set oven to 325 degrees
  3. Grease a 13 x 9-inch baking dish
  4. In a heavy saucepan bring butter
  5. Sugar and water to a boil over medium heat stirring constantly until the butter is melted and sugar is dissolved remove from heat and stir in 2 cups chocolate chips until melted then vanilla
  6. Cool slightl
  7. In a mixing bowl whisk eggs until blended then add into the slightly cooled chocolate mixture
  8. Beating or whisking until thoroughly combined
  9. Add in flour
  10. Baking soda and salt
  11. Add to the egg / chocolate mixture
  12. Mix to combine
  13. Stir in 1 cup chocolate chips and chopped peanuts
  14. Transfer to prepared baking dish
  15. Bake for 35-40 minutes
  16. Cool completely
  17. For the frosting / ganache
  18. In a bowl beat peanut butter with 1 / 4 cup butter using an electric mixer until well combined
  19. Add in powdered sugar
  20. Pinch salt
  21. Nutmeg
  22. Cream and vanilla
  23. Beat until smooth and blended
  24. Spread over cooled brownies
  25. For the chocolate topping
  26. In a saucepan combine the chocolate with 1 / 4 cup butter
  27. Cook stirring over low heat until smooth
  28. Drizzle the chocolate over the top of the peanut butter ganache
  29. Then spread out to cover
  30. Chill about 2 hours or until set
  31. Cut into squares
