  1. Preheat the oven to 180c / 350f / gas mark 4
  2. Line two baking sheets with baking paper
  3. Cream the butter and sugar together until light and fluffy
  4. Add the orange zest
  5. Melt 140 g of the chocolate
  6. Do not allow it to overheat
  7. Add the melted chocolate to the creamed butter and sugar
  8. Stir in the marmalade and the remaining chopped chocolate
  9. Fold in the flour and mix
  10. Divide into balls
  11. Arrange 5cm apart on baking sheet
  12. Press lightly into flattish rounds
  13. Bake for 10 - 12 minutes or until dry and smooth to touch
  14. Cool on a wire rack
