  1. Preheat your oven to 375f
  2. Line two baking trays with parchment paper and set aside
  3. Sift together flour
  4. Cocoa powder
  5. Baking powder
  6. Baking soda and salt into a large bowl and set aside
  7. In the bowl of an electric mixer fitted with the paddle attachment
  8. Beat butter for 2 minutes
  9. Add sugar and beat on medium speed until light and fluffy
  10. Add 2 eggs
  11. One at a time and beat until incorporated
  12. Add flour mixture gradually and mix until combined
  13. Add the chopped hazelnuts and chocolate and mix with a wooden spoon
  14. Flour your hands and turn out dough onto a lightly floured surface
  15. Cut in half and shape each piece into a 12 inch log
  16. Place them onto the baking trays and flatten them slightly
  17. Lightly beat the egg white and brush the logs
  18. Sprinkle generously with sugar
  19. Bake the logs
  20. Rotating trays half way through for 25 minutes
  21. Transfer the logs onto a cutting board and let cool for 20-30 minutes
  22. Reduce the oven temperature to 300f cut the logs crosswise to half an inch thick slices
  23. Place on a wire rack and bake for 30 minutes
