  1. With kitchen shears
  2. Snip 2 tablespoons parsley and 2 tablespoons cilantro
  3. And combine with 1 / 2 teaspoon lime zest
  4. 1 tablespoon oil
  5. And 1 clove of garlic
  6. Set aside
  7. Butterfly pork loin and brush with oil
  8. Spread remaining garlic on cut side of pork loin
  9. Season with pepper
  10. And add remaining parsley
  11. Cilantro and lime zest
  12. Roll loin back to original shape and tie at 2 inch intervals with kitchen string
  13. Spread reserved herb mixture over outside of pork and season with black pepper
  14. Grill pork over medium
  15. Indirect heat
  16. Covered
  17. Until internal thermometer registers 150 degrees f
  18. About 1 to 1 1 / 2 hours
  19. Meanwhile
  20. Brush corn with melted butter and season with salt and pepper
  21. Grill corn during last 20 minutes of grilling the pork
  22. Turning occasionally
  23. Grill pineapples during last 5 to 10 minutes of pork grilling time
  24. When pork is done
  25. Remove pork and cover with foil
  26. Let rest 10 minutes
  27. Remove string
  28. Slice and serve
