  1. Preheat oven to 400 degrees f
  2. Spray a baking sheet with nonstick spray
  3. Spray a skillet with nonstick spray
  4. Set over medium-high heat
  5. Add the turkey
  6. Onion
  7. Garlic
  8. Chili powder
  9. Oregano
  10. And cumin and cook until the turkey is done
  11. Add the tomato sauce and the chiles
  12. Bring to a boil
  13. Reduce the heat and simmer
  14. Uncovered
  15. Until the flavors are blended and the mixture thickens
  16. 5 minutes or so
  17. Remove from the heat and stir in 1 / 2 the cheddar cheese
  18. Wrap the tortillas in foil and place in the oven to warm for 10 minutes
  19. Spoon about 1 / 2 cup of the filling into the center of each tortilla
  20. Fold in the sides
  21. Then roll to enclose the filling
  22. Place the chimichangas
  23. Seam-side down
  24. On the baking sheet
  25. Sprinkle the other 1 / 2 of the cheese on top
  26. Bake until golden
  27. 15 minutes or so
  28. Enjoy !
