  1. Preheat a griddle or a large heavy skillet over medium-high heat
  2. Roast the vegetables and the garlic on the griddle for 6 to 8 minutes
  3. Turning them with tongs to brown all sides
  4. Peel the chile and discard the skin and seeds
  5. Peel and dice the onion
  6. Tomatoes and garlic
  7. Place the roasted ingredients and dried oregano in a mortar
  8. Blender or food processor
  9. And grind or chop to the desired consistency
  10. Warm the oil in a large skillet over medium-high heat
  11. Add the salsa and saut for 2 to 3 minutes
  12. Stir in the fresh oregano and cilantro
  13. And season to taste with salt
  14. Serve warm or at room temperature
