  1. In a small nonstick skillet gently saute ginger
  2. Brown sugar and lime zest over medium heat for 2 minutes
  3. Add lime juice and simmer until no liquid remains
  4. Transfer mixture to a blenderor or food processor and add watermelon
  5. Mint leaves and sparkling wine / water
  6. Puree until smooth
  7. Strain with sieve into bowl
  8. Chill soup for at least 3 hours
