  1. Rinse and dry the squid thoroughly
  2. Slice each squid tube horizontally into 1 / 2in rings
  3. Set aside
  4. In a large bowl
  5. Combine both types of flour with the chili powder
  6. Sea salt and szechuan pepper
  7. Add the squid and toss to coat
  8. Shaking off any excess flour
  9. Fill a wok with oil to about a third full and heat until the surface seems to shimmer slightly
  10. "add half the squid and deep-fry it for between 45 seconds and 1 minute
  11. Or until its just tender and beginning to colour"
  12. Remove with a slotted spoon and drain well on kitchen paper
  13. Repeat the process with the remaining squid
  14. Arrange the lettuce leaves on a platter and top with the squid
  15. Serve with the lemon wedges
