  1. Heat the oil and grate in the garlic and cumin- fry for a minute or so
  2. Being careful not to burn them
  3. Add the tomatoes and lemon juice and seasoning
  4. Simmer for 5- 10 minutes
  5. Put in the blender with the coriander and blitz
  6. You can serve it warm or cold
