  1. Scrub the oranges well
  2. Cut the rind from 2 oranges
  3. Using a sharp knife
  4. And trim off most of the pith
  5. Cut the rind into short
  6. Thin strips
  7. Squeeze the juice from the oranges
  8. You need 250ml
  9. Combine the orange rind and juice
  10. Sugar
  11. Ginger
  12. Chilli
  13. Star anise
  14. Cinnamon sticks
  15. Sweet chilli sauce
  16. Fish sauce
  17. Vinegar and red wine in a saucepan and bring to the boil
  18. Stirring
  19. Boil for around 10 minutes
  20. Stirring occasionally
  21. Until lightly syrupy
  22. Prick the duck skin well
  23. And heat the oil in a non-stick frying pan
  24. Add the duck breasts and sear
  25. Skin side down for 8 minutes or till brown
  26. Then turn and cook for another 8 minutes
  27. Remove the duck and allow it to rest for 5 minutes before serving
  28. Cut the spring onions into finger lengths
  29. Then into strips
  30. Slice the duck thickly
  31. Arrange on warmed plates and scatter with spring onion shreds
  32. Spoon the sauce over the top
  33. Serve with rice or noodles
