Steps

  1. Mix the fish and chilli sauces
  2. Lime juice and sugar and set aside
  3. Heat a wok or large pan
  4. Add oil and fry onions
  5. Chillies and garlic untill soft
  6. Chilli
  7. Add pork or chicken and stir-fry untill cooked
  8. Stir in prawns and cook through
  9. Add the rice and str-fry untill heated through
  10. Pour the eggs mixed with soy sauce and pepper into a seperate pan
  11. Heat and stir until the eggs are set
  12. Cut into small pieces and add to the rice
  13. Pour over the sauce and mix all together over a high heat for a minute
  14. Remove from the heat mix in the spring onions and coriander leaves
