Steps

  1. Combine chilli powder
  2. Cornflour and salt
  3. Thoroughly coat chicken slices
  4. Heat peanut oil in wok over med-high heat
  5. Cook chicken in 4 batches
  6. Adding more oil between batches if necessary
  7. Remove from wok and leave on paper towels to drain
  8. Put hokkein noodles in a strainer and run under warm water
  9. Using your fingers to separate the noodles
  10. Re-heat wok over medium heat
  11. Add a splash of oil and stir-fry carrot and spring onion for 1 minute
  12. Add noodles and mirin
  13. Toss for 1 minute
  14. Add oyster sauce and 2 tab water
  15. Stir through then cover and steam for 2-3 minutes
  16. Add chicken
  17. Toss
  18. Cover and steam 30 seconds
  19. Serve into warm bowls and enjoy !
