  1. Beat eggs
  2. Finely chop coriander and red chillies
  3. Finely chop the potato once boiled
  4. Mix all ingredients
  5. Heat 1 tbsp oil in a frying pan over medium heat
  6. Cook heaped tablespoons of the mixture for 3-4 minutes each side until crisp
  7. Add more oil for each batch as required
  8. Serve with ultimate avocado dip
