  1. Process coriander
  2. Parmesan
  3. Cashews and garlic until smooth
  4. Cut each chicken breast into half
  5. Hoizontally
  6. Heat the 1 tblsp oil in a large frying pan over a moderate heat
  7. Cook chicken for 3 minutes each side or until cooked
  8. Transfer to a heatproof plate
  9. Brush with sambal oelek
  10. Cover with foil
  11. Rest for 5 minutes
  12. Slice
  13. Add onion and tomatoes to pan
  14. Cook and stir for 2 - 3 minutes or until onion softens
  15. Remove from heat
  16. Cook noodles in a large saucepan of boiling salted water
  17. Stirring occasionally for 3 minutes or until tender
  18. Drain
  19. Return to pan
  20. Add chicken
  21. Coriander pesto
  22. Tomato mixture
  23. Spinach leaves and lemon juice
  24. Season with salt
  25. Toss to combine
  26. Spoon into shallow serving bowls
  27. Serve at once
