  1. Combine both of the flours
  2. The chilli falkes and salt in a food prcessor bowl
  3. Whiz until just combined
  4. Add cheeses and mix very briefly
  5. Add the butter and whiz until the mixture resembles coarse breadcrumbs
  6. Add the milk and process until the mixture forms a ball
  7. Remove the mixture from the processor bowl and knead lightly on a floured board or clean bench
  8. Knead until the mixture comes together and them roll into a log about the diameter of a 50c coin
  9. Roll the log in baking paper and twist the ends
  10. Chill in the refrigerator until firm enough to slice
  11. The mixture can also be frozen at this stage
  12. Preheat your oven to 180c
  13. Cut the log into slices about 5mm thick and place the discs on paper-lined oven trays
  14. No need to grease the trays
  15. Bake 12-15 minutess or until golden
  16. Remove from the oven and rest on the oven trays for a few minutes and then transfer to a wire rack to cool
  17. Makes 40-50 biscuits
