  1. Dice the bacon
  2. Cook bacon fat and rind until fat runs then remove and discard
  3. Or heat the oil in a pan over medium heat
  4. Cook the bacon
  5. Onion
  6. Chili and garlic gently for about 5 minutes or until the onion is softened
  7. Add the chili powder and cook a minute or so more
  8. Add the potato pieces and stir gently
  9. Turn the heat to low and cover with a lid
  10. Cook for about 45 minutes shaking the pan occasionally
  11. When the potatoes are very tender
  12. Remove from the heat
  13. Season well and stir the sour cream through gently
  14. Serve
