Steps

  1. Combine the first seven ingredients in a large skillet
  2. Bring to a boil
  3. Add the zucchini
  4. Squash
  5. Carrots and red pepper
  6. Cover and reduce the heat
  7. Simmer for 6 to 8 minutes or until the vegetables are crisp-tender
  8. Drain well
  9. Rinse in cold water
  10. Transfer the vegetables to a serving dish
  11. Add the celery seed and toss well
  12. Set aside
  13. In a small saucepan
  14. Combine the salad dressing
  15. Sugar substitute
  16. Vinegar and water
  17. Cook and stir until mixture comes to a boil
  18. Pour over the vegetables
  19. Cover and refrigerate until chilled
  20. Stirring several times
  21. Serve with a slotted spoon
