  1. Pour hot water over tomatoes and leave them there for 1 minute
  2. Then put them in ice water
  3. Peel and deseed them while keeping the juices
  4. Chop the tomato pulp coarsely
  5. Set 6 tablespoons aside
  6. In a large pan
  7. Saut onion in hot oil for 2 minutes
  8. Add pressed garlic
  9. Cook for another 5 minutes
  10. Add the chopped tomato
  11. Tomato juice
  12. Vegetable stock
  13. Thyme
  14. Salt
  15. Pepper
  16. And 1 clove of garlic
  17. Simmer for 5 minutes
  18. Remove from heat
  19. Immediately add the balsamic vinegar
  20. The capers
  21. The 6 tablespoons of tomatoes you put aside earlier
  22. And the chopped parsley
  23. Let it cool and chill it for 2-3 hours
  24. Taste again
  25. Add more of the spices if you like
  26. Serve with baguette and garlic butter
  27. The soup tastes the best cold
  28. But not ice cold !
  29. Enjoy with a good glass of ros
  30. And have fun
