Steps

  1. Saute the onion in butter in a large saucepan over medium heat
  2. Stirring constnatly
  3. Until tender
  4. Add tomato
  5. Cucumber
  6. Chicken broth and basil
  7. Bring to a boil
  8. Reduce heaet
  9. And simmer
  10. Uncovered
  11. 30 minutes
  12. Stirring frequently
  13. Transfer half of the tomato mixture to a blender
  14. Cover and process until smooth
  15. Repeat the procedure with the remaining mixture
  16. Stir in the yogurt and salt
  17. Cover and chill
  18. To serve
  19. Ladle into individual soup bowls
  20. Garnish with fresh chopped mint
