Steps

  1. In a soup pot
  2. Bring the water
  3. Potatoes
  4. Dill & scallions to a medium boil & cook for 5 minutes
  5. Add the chopped sorrel & lemon juice
  6. Salt
  7. Pepper & sugar
  8. Simmer for 10 minutes
  9. Remove from heat & discard the dill sprigs
  10. In a large bowl
  11. Beat the eggs with the cold water till light
  12. Very slowly pour 2 cups of the hot stock
  13. Into the egg mixture
  14. Stirring constantly to prevent curdling
  15. Then pour egg mixture back into the soup pot
  16. Stirring thoroughly
  17. Chill until very cold
  18. At least 3 hours
  19. Just before serving
  20. Whisk in the sour cream & garnish with dill
  21. Top with cucumbers
