  1. Drop the noodles into a large pan of boiling water and cook for about 3 minutes or until just tender
  2. Drain and rinse them well under running cold water
  3. Drain well and set aside
  4. Bring a small pan of water to the boil
  5. And blanch the ginger
  6. Carrot
  7. And green onion for 30 seconds
  8. Drain and place in a bowl of iced water
  9. Drain again when the veggies are cool
  10. Sauce: combine the ingredients
  11. Bring to the boil in a small saucepan
  12. Then cool completely
  13. When ready to serve
  14. Pour into 4 small
  15. Wide dipping bowls
  16. Gently toss the noodles and vegetables to combine
  17. Arrange in individual serving bowls
  18. Serve with the dipping sauce
  19. Arrange a little of the garnish on the side of each plate
  20. The noodles should be dipped into the sauce before being eaten
