  1. Prepare the salmon:
  2. In a baking dish large enough to hold the salmon
  3. Combine the 1 cup oil and basil
  4. Vinegar
  5. Salt and pepper
  6. Add salmon and turn to coat evenly with marinade
  7. Cover with plastic wrap
  8. Refrigerate for at least 30 minutes or up to several hours
  9. Preheat the oven to 350f
  10. In a large
  11. Heavy skillet
  12. Heat 2 tablespoons of oil over medium-high heat
  13. Sear the salmon fillets for 1 minute per side
  14. Then transfer to a large oven-safe dish
  15. Bake about 10 minutes
  16. If serving chilled
  17. Let cool
  18. Then cover with plastic wrap and refrigerate
  19. Make the mayonnaise:
  20. In a food processor
  21. Blend the herbs
  22. Shallots
  23. Lemon juice
  24. Oil
  25. Salt and pepper for 1 minute
  26. Add the mayonnaise and blend well
  27. Taste and adjust seasoning
  28. If sauce is too thick
  29. Add a little more oil
  30. Cover with plastic wrap and refrigerate
  31. To serve:
  32. Arrange the lettuce or spinach and the radishes on a large platter
  33. Place the salmon on the greens
  34. Drizzle with the herb mayonnaise
  35. And garnish with fresh minced chives
  36. Serve with more sauce on the side
  37. Enjoy !
