Steps

  1. Place the sage
  2. Fennel seeds
  3. Mint and lemon rind in a large teapot or plunger
  4. Add the boiling water and cover with a lid
  5. Set aside for 15 minutes to infuse
  6. Strain into a jug and stir in honey to taste
  7. Cover with plastic wrap and place in the fridge for 1 hour to chill
  8. Place ice cubes and a few mint leaves in serving glasses and pour over the chilled tea to serve
