  1. In a medium saucepan heat oil over medium-low heat until hot but not smoking and saut one third of the zucchini
  2. Stirring occasionally
  3. Until golden
  4. Add remaining zucchini and water and simmer until zucchini is very tender
  5. About 15 minutes
  6. Cool mixture slightly and in a blender puree in batches until smooth
  7. Transferring to a bowl
  8. Stir in yoghurt
  9. Mint
  10. And salt and pepper to taste
  11. Chill soup
  12. Covered
  13. At least until cold
  14. About 6 hours
  15. And up to 1 day
  16. Before serving
  17. Season with salt and pepper
  18. If necessary
