  1. In large stock pot
  2. Heat olive oil and saut onion
  3. Celery
  4. And garlic until limp
  5. Add lentils and broth
  6. Bring to a boil
  7. Reduce heat and simmer
  8. Covered
  9. 1 hour or until lentils are tender
  10. Cool slightly
  11. Using blender
  12. Puree soup in batches
  13. Return to stock pot
  14. Rinse spinach in colander and squeeze out as much moisture as possible
  15. Add spinach to soup
  16. Stirring to combine completely
  17. Place in non-reactive container and chill
  18. Covered
  19. In refrigerator
  20. Serve cold or at room temperature
