  1. Special equipment suggested: a heavy-bottomed 3-quart saucepan with cover
  2. Simmering the soup
  3. Bring the leeks
  4. Potatoes and water to the boil in the saucepan
  5. Salt lightly
  6. Cover partially
  7. And simmer 20-30 minutes
  8. Or until the vegetables are tender
  9. Puree the soup if you wish
  10. Taste
  11. And correct seasoning
  12. After chilling the soup
  13. You may wish to stir in a little more cream
  14. Taste carefully again
  15. And correct the seasoning
  16. Top each serving with a sprinkle of chives or parsley
