  1. Steam beans until just crisp-tender
  2. Rinse / plunge in ice water or very cold water
  3. Drain very well
  4. In a bowl combine oil
  5. Mustard
  6. Wine vinegar
  7. Lemon juice
  8. Salt and pepper
  9. In a large bowl place the beans and chopped onions
  10. Pour the vinaigrette over
  11. And toss well to combine
  12. Adjust salt and pepper to taste
  13. Cover and chill for a minimum of 5 hours
