  • Carbohydrates: 500.3

  1. In soup pot or large saucepan
  2. Melt butter
  3. Add leeks and cook until tender but not brown
  4. Stir in lettuce and cook until wilted
  5. Add peas and combine well
  6. Add stock
  7. Parsley
  8. Tarragon
  9. Chervil
  10. Pepper and just a sprinkling of salt
  11. Bring mixture to a boil
  12. Reduce heat and cover and cook until peas are tender
  13. About 30 minutes
  14. Puree soup in a blender
  15. Chill thoroughly
  16. Stir in cream
  17. Taste and adjust seasoning
  18. Adjust consistency with additional stock or cream if necessary
