  1. Whisk the milk
  2. Eggs
  3. Sugar substitute
  4. Espresso powder or coffee
  5. And vanilla extract until well-blended
  6. Pour into four 6-ounce custard cups or ramekins and place in a 10" skillet
  7. Fill the skillet with water to 1 / 2" from the tops of the custard cups
  8. Bring the water to a boil over high heat
  9. Reduce the heat to low
  10. Cover
  11. And simmer for 10 minutes
  12. Remove the cups from the skillet
  13. Cover with plastic wrap touching the surface of the pudding
  14. And refrigerate for 3 hours
  15. Or until chilled
  16. Garnish with the cinnamon and lemon twists
