  1. In a medium saucepan
  2. Cook leek in oil over medium-low heat
  3. Stirring occasionally
  4. Until softened
  5. Add curry powder and turmeric and cook
  6. Stirring
  7. Until fragrant
  8. About 30 seconds
  9. Add garlic
  10. Squash and water and simmer
  11. Stirring occasionally
  12. Until squash is very tender
  13. About 15 minutes
  14. Cool mixture slightly and in a blender puree in batches until smooth
  15. Transferring to a bowl
  16. Season soup with salt and pepper
  17. Chill soup
  18. Covered
  19. At least until cold
  20. About 6 hours
  21. And up to 1 day
  22. Before serving
  23. Season with salt and pepper
  24. If necessary
  25. Serve soup with dollops of sour cream and chutney
