  1. Heat olive oil in a large saucepan
  2. Add onion
  3. Celery and garlic
  4. Cook till softened
  5. Add diced apples and cook till fork tender
  6. Stir in curry powder and turmeric
  7. Add chicken stock and bring mixture a boil
  8. Reduce heat to low and simmer till mixture is reduced by half
  9. Remove from heat
  10. Stir in cilantro and allow mixture to cool
  11. Puree in blender or food processor and strain mixture
  12. Stir in cream
  13. Season with salt & pepper to taste
  14. Chill several hours
  15. When ready to serve
  16. Stir well and divide among 6 soup bowls
  17. Garnish with 2 tbsp apple pieces chopped just ahead of service so they are fresh
  18. Serve immediately
