Steps

  1. Reserve half of one cucumber
  2. Place the remaining cucumbers into a food processor with the yogurt
  3. Milk
  4. Lemon juice
  5. And oil to taste
  6. Puree
  7. Add salt to taste
  8. Chill the puree and reserved cucumber separately
  9. Meanwhile
  10. Make the timbale mixture:
  11. Combine the cooked bulgur
  12. Tomato
  13. Oil
  14. Lemon juice
  15. Chopped mint
  16. Cumin
  17. And salt in a small bowl
  18. Cover and set aside to marinate for 10 to 15 minutes
  19. To serve:
  20. Finely dice the reserved cucumber and stir into the puree
  21. Divide the cucumber puree among four wide
  22. Shallow soup bowls
  23. Firmly press enough bulgur mixture into a 1 / 3 cup measuring cup to reach the top
  24. Run a knife along the edges to loosen the timbale
  25. Position it over the center of a soup bowl and turn it over
  26. Tap the bottom to release the timbale into the puree
  27. Repeat to make 3 more servings
  28. Garnish each portion with a sprig of mint
