Steps

  1. Cut the peaches into large chunks over the bowl of a food processor
  2. Discarding the pits
  3. Add the sugar and lemon juice and process into a smooth puree
  4. Pour the puree into a med-sized bowl
  5. Whisk in the vanilla and yogurt
  6. Stir in 1 cup of the lemonade
  7. Cover in plastic wrap and refrigerate for at least 4 hours
  8. Chill the bowls you plan to serve this in
  9. Just before serving
  10. Check the consistency
  11. If it seems to need some thinning
  12. Stir in enough of the remaining 1 cup of lemonade to achieve the correct texture
  13. Serve in the chilled bowls
  14. Garnishing with lemon thyme or mint
  15. If desired
