chilled cream of vidalia onion soup

Desciption

when we first prepared this recipe, we weren't quite sure we'd like this soup served cold, but we figured we could always heat it up if we preferred it that way. however, when the soup was done and we tried it chilled, it was absolutely delicious! a wonderfully creamy and tasty soup, a keeper for my cookbook. it is an adaption of a recipe from gourmet magazine (june 1989). the original recipe made a huge batch - this is our scaled-down version with some substitutions. the recipe could easily be made vegetarian simply by omitting the bacon (although you could try veggie bacon) and using vegetable broth. prep time includes chilling.

Steps

  1. In a heavy kettle cook the bacon over moderate heat
  2. Stirring occasionally
  3. Until it is crisp and transfer it with a slotted spoon to paper towels to drain
  4. Add the butter and oil to the kettle and in the fat cook the onion and garlic
  5. Covered
  6. Over low heat
  7. Stirring occasionally
  8. For 25 to 30 minutes
  9. Or until they are colored lightly and softened
  10. Add chicken broth
  11. Wine
  12. Thyme
  13. And bay leaf and simmer the mixture
  14. Covered
  15. For 20 minutes
  16. Discard the bay leaf and in a blender or food processor pure the mixture in batches
  17. "strain the mixture into a bowl
  18. Pressing hard on the solids- this is an important step
  19. So dont skimp on the time it might take to separate the solids"
  20. Discard solids
  21. Chill the mixture covered
  22. For 3 to 4 hours
  23. Or until it is cold
  24. Whisk in the heavy cream
  25. Crme frache
  26. Lemon juice
  27. Tabasco
  28. Nutmeg
  29. And salt and pepper to taste- i used a stick blender to get the milk and cheese smooth- and serve the soup in chilled bowls
  30. Sprinkle with the bacon
  31. Croutons
  32. And scallion
