chilled coconut soup


jane milton's recipe includes, milk, coconut milk, shredded dry coconut, white pepper and cilantro.

  1. Pour the milk in to a large saucepan
  2. Bring to a boil
  3. Stir in the coconut
  4. Lower the heat and let simmer for 30 minutes
  5. Spoon the mixture into a food processor and process until smooth
  6. This may take a while--up to 5 minutes--so pause frequently and scrape down the sides of the bowl
  7. Rinse the pan to remove any coconut that remains
  8. Pour in the processed mixture and add the coconut milk
  9. Stir in the chicken stock cream
  10. Salt
  11. Pepper
  12. And sugar
  13. Bring the mixture to a boil
  14. Stirring occasionally then lower the heat and cook for 10 minutes
  15. Reserve a few cilantro leaves to garnish
  16. Then chop the rest finely and stir into the soup
  17. Pour the soup into a large bowl
  18. Let it cool
  19. Then cover and put into the refrigerator until chilled
  20. Just before serving taste the soup and adjust the seasoning as chilling will alter the taste
  21. Serve in chilled bowls
  22. Garnished with cilantro leaves
