Steps

  1. In a large saucepan
  2. Whisk together the olive oil
  3. Lemon juice
  4. Oregano
  5. Basil
  6. And garlic
  7. Simmer while you prepare the cauliflower
  8. In a large saucepan
  9. Parboil the cauliflower in boiling water for 5 minutes
  10. Drain
  11. Add cauliflower to dressing in saucepan
  12. Toss to coat
  13. Take off the heat and place in a bowl
  14. Set aside to marinate for 1 hour at room temperature
  15. Then chill for 2 hours
  16. Before serving
  17. Add parsley
  18. Onion
  19. Radishes
  20. Feta
  21. And olive
  22. Toss well
  23. To serve
  24. Cover a large platter with spinach and with a slotted spoon
  25. Put the salad on top of the greens in the center of the platter
  26. Pour remaining dressing over spinach and serve immediately
