Steps

  1. Peel the beets and cut them into 1" chunks
  2. Yes

  4. Peel and dice the onion
  5. And chop the celery
  6. In a heavy-bottomed soup pot
  7. Cook the onion and celery in the olive oil
  8. With the sugar and a little salt and pepper
  9. When soft
  10. Add the beets
  11. Vinegar and broth
  12. And simmer
  13. Covered
  14. Until they are tender- about 40 minutes
  15. Puree the soup
  16. And chill 6 hours to overnight
  17. Adjust the seasoning of the soup by adding a little more salt and pepper
  18. If needed
  19. And lemon juice to taste
  20. Serve with a dollop of yogurt
  21. And a sprinkling of minced chives
