Steps

  1. Melt butter in a medium pan over medium heat
  2. Add minced shallots and minced ginger
  3. Saut for about 1 minute
  4. Add chicken broth
  5. Lime juice
  6. Cayenne pepper
  7. Bring to a boil
  8. Reduce heat to medium-low and simmer for about 3 minutes
  9. Transfer mixture to a large bow
  10. Pure avocados and half & half in a blender
  11. Whisk into soup
  12. Season with salt and pepper
  13. Cover and refrigerate for at least 3 hours
  14. Garnish soup with cilantro and lime slices
