Steps

  1. Guacamole:
  2. Preheat a grill pan
  3. In a small bowl
  4. Toss the scallions
  5. Garlic and jalapeno with the vegetable oil
  6. Grill over moderately high heat
  7. Turning occasionally
  8. Until charred all over
  9. 3-5 minutes
  10. Transfer to a work surface and let cool
  11. Finely chop the scallions and jalapeno
  12. Transfer to medium bowl
  13. Peel the garlic cloves
  14. Mash them to a paste and add them to the bowl
  15. Scoop the avocado flesh into the bowl and coarsely mash with a fork
  16. Fold the cilantro and lime juice into the guacamole
  17. Season with salt & pepper
  18. Chilled avocado soup topped with crab:
  19. In a blender
  20. Puree the guacamole with the cold buttermilk
  21. Bottled clam juice
  22. Ice water and lime juice
  23. Season the soup with salt and pepper
  24. Pour the soup into 4 bowls and top with the jumbo lump crab meat
  25. Garnish each bowl of soup with creme fraiche
  26. Fried tortilla strips and finely chopped chives
