Steps

  1. Shell the fresh peas
  2. Melt butter in a saucepan and gently saute the onion until it is soft but not brown
  3. Remove the onion mixture from the heat and mix in the milk
  4. Stock
  5. Peas
  6. 2-3 mint sprigs
  7. Sugar
  8. Salt and pepper
  9. Bring to the boil
  10. Stirring regularly
  11. Simmer
  12. Covered for about 30 minutes or until the peas are really tender
  13. Let it cool just a little bit
  14. Then pure the mixture using a food processor
  15. Blender or by rubbing though a fine sieve
  16. Add fresh cream to the pure
  17. Mix well and then chill for 2 hours
  18. Serve chilled
  19. Garnished with sprigs of fresh mint
