  1. Drain and rinse the first 5 ingredients
  2. Transfer beans to a large soup pot
  3. Add in remaining ingredients and mix well
  4. Bring to a boil
  5. Stir occasionally
  6. Lower heat
  7. Cover
  8. And simmer for about 1 hour
  9. Spoon into serving bowl and garnish with shredded cheddar cheese
