Steps

  1. Saut onions
  2. Meat
  3. And garlic until onions are clear
  4. Drain any fat
  5. Add tomatoes
  6. Spices
  7. Salt and pepper and simmer 30 minutes
  8. Add diced chilies
  9. Cut tortillas into fourths
  10. In a 13x9x2-inch pan
  11. Layer half of tortillas
  12. Overlapping to cover the bottom of pan
  13. Cover with half the meat sauce
  14. Sprinkle with half the cheese
  15. Repeat layers
  16. Beginning with tortillas and ending with cheese
  17. Bake at 350f about 30-45 minutes
  18. Or until bubbling and cheese has melted and started to turn golden
  19. Remove from oven and spread with a layer of sour cream
  20. This freezes well--do all but add sour cream topping and freeze
  21. When ready
  22. Reheat and top with sour cream
