Steps

  1. Preheat oven to 350f
  2. Slit ea chili lengthwise & spread open
  3. Place in a single layer in a greased 7x11 inch glass baking dish
  4. In a sml skillet
  5. Melt butter over med-heat
  6. Add onion
  7. Cook till tender & remove from heat
  8. In a lrg bowl
  9. Combine onion mixture
  10. Eggs
  11. Sour cream
  12. Flour
  13. Salt & pepper
  14. Stir in tortilla pieces + cheese & pour over chilies
  15. Bake 25-30 min or till a knife inserted in the center comes out clean
  16. Serve immediately w / sour cream & salsa -- or cool
  17. Cover & refrigerate till ready to serve
  18. To serve after refrigeration: cover & bake in a preheated 350f oven for 30-35 min or till heated through
  19. Serve hot w / sour cream & salsa
