Steps

  1. Preheat oven to 450f
  2. Remove stems
  3. Seeds
  4. And veins from pepper
  5. In a medium-size saucepan
  6. Bring a large amount of water to a boil
  7. Add peppers and cook
  8. Uncovered
  9. For 3 minutes
  10. Drain peppers and invert onto paper towels
  11. Cut the 4 ounces colby-monterey jack cheese into pieces to fit inside pepper pieces
  12. Place cheese inside pepper pieces
  13. Arrange pepper pieces in a lightly greased 11"x7"x2" baking dish
  14. In a medium-size bowl
  15. Whisk together the eggs
  16. Egg whites
  17. And milk
  18. Whish in the flour
  19. Cilantro
  20. Baking powder
  21. Salt
  22. And cayenne
  23. Pour egg mixture over pepper pieces
  24. Bake for 15 minutes or until cheese is melted and batter is puffed and golden
  25. Sprinkle the 1 / 3 cup shredded colby-monterey jack cheese on top
  26. Serve with the picante sauce
