  1. Wontons:
  2. Finely chop the shrimp
  3. Put them in a bowl and stir in the garlic
  4. Scallion
  5. Soy sauce
  6. Fish sauce
  7. Cilantro and egg yolk
  8. Lay the wonton wrappers on work surface in a single layer and place about 1 tablespoon of the filling mixture into the middle of each
  9. Brush the edges with egg white and fold each one into a triangle
  10. Pressing lightly to seal
  11. Bring the 2 bottom corners of the triangle around to meet in the middle
  12. Securing with a little egg white to hold in place
  13. Soup:
  14. Slice the chilies on a steep diagonal angle to make long slices
  15. Removing seeds if you prefer
  16. Slice the scallions on the same angle
  17. Place the stock
  18. Fish sauce
  19. Soy sauce
  20. And rice wine in a large pot and bring to a boil
  21. Add the chilies and scallions
  22. Drop the wontons into the pot and simmer for 4-5 minutes until thoroughly heated
  23. Serve the soup and wontons in small bowls
  24. Garnish with fresh cilantro leaves sprinkled on top just before serving
