  1. Cut ancho chilies in half lengthwise
  2. Seed and stem
  3. Heat heavy large skillet over medium-high heat
  4. Add chilies and stir until chilies look dry and darken slightly in color
  5. Turning occasionally
  6. About 2 1 / 2 minutes
  7. Cool completely
  8. Break chilies into 1 / 2-inch pieces
  9. Grind coarsely in spice mill or coffee mill
  10. Add oregano and grind to blend
  11. Transfer to small bowl
  12. Mix in salt and sugar
  13. Stir in garlic
  14. Chipotle chilies
  15. And lime juice
  16. Whisk in oil
  17. Add enough water to thin to spreadable consistency
  18. Preheat oven to 400f spread 2 generous teaspoons chili mixture over each salmon fillet
  19. Place on rimmed baking sheet
  20. Bake until salmon is opaque in center
  21. About 10 minutes
