Steps

  1. At least a few hours and up to 1 month before you plan to cook
  2. Make the butter
  3. In a small skillet over medium heat
  4. Heat the oil
  5. Add the cilantro
  6. Shallot
  7. And garlic and cook for 2 to 3 minutes
  8. Stirring often
  9. Until the shallot is soft
  10. Transfer to a bowl and set aside to cool
  11. In a medium bowl
  12. Cream the butter with a fork
  13. Add the cilantro mixture and blend well
  14. Transfer to a 12-x-12-inch sheet of waxed paper and form into a log about 8 inches long in the center of the sheet
  15. If the mixture is too warm to handle
  16. Just refrigerate for a couple of minutes until it is ready
  17. Roll the butter up in the waxed paper to make a firm log and twist the ends to hold it tight
  18. Place in the freezer until firm
  19. One hour before you plan to cook
  20. Make the rub
  21. In a small bowl
  22. Mix together the chili powder
  23. Salt
  24. Granulated garlic
  25. Onion powder
  26. And smoked paprika
  27. Add the oil and mix well
  28. Place the steaks on a big platter and brush the wet chili rub evenly on both sides on the steaks
  29. Refrigerate until it is time to cook
  30. Prepare the grill for cooking over direct medium-high heat
  31. Place the steaks directly over the cooking grate
  32. Cook for 4 to 5 minutes per side for medium-rare
  33. Or to your desired degree of doneness
  34. Remove to individual serving plates and top each steak with a couple of thin slices of the butter
  35. Let rest for 5 minutes before serving
