  1. Cut beef steak crosswise into three equal pieces
  2. Combine marinade ingredients in small bowl
  3. Place beef and marinade in food-safe plastic bag
  4. Turn beef to coat
  5. Close bag securely and marinate in refrigerator for one hour
  6. Soak twelve 9-inch bamboo skewers in water for one hour
  7. Drain
  8. Meanwhile
  9. Combine tomatillos
  10. Anaheim peppers and onion wedges in medium bowl
  11. Drizzle with oil
  12. Toss to coat
  13. Set aside
  14. Alternately thread vegetables evenly onto six skewers
  15. Remove beef from marinade
  16. Discard marinade
  17. Insert remaining skewers into beef pieces in the same direction as the grain
  18. Place beef on grid over medium
  19. Ash-covered coals
  20. Grill
  21. Uncovered
  22. 10 to 13 minutes for medium-rare to medium doneness
  23. Turning occasionally
  24. Place vegetable skewers on grid around beef
  25. Grill uncovered
  26. 6 to 8 minutes or until tender
  27. Turning once
  28. Cut beef between skewers to make individual servings
  29. Season beef and vegetable skewers with salt and pepper as desired
  30. Serve with red pepper-mango salsa or chipotle cream
